
melt butter on your cast iron skillet (or any pan) and then plop a piece of bread on one side, frozen spinach on the other. let it get all toasty. flip the bread, add an egg to the spinach and scramble.
put the toast on your plate, the eggs on top and douse it in trader joe’s vegan caesar. that’s all!!
**yummy additions if you’re getting fancy: add fresh lettuce under the eggs, add cheddar or your fave cheese to the scrambled eggs, add any other veggies like diced onions or garlic or herbs
